Ingredients
You only need a handful of ingredients to make these colorful Greek-inspired appetizer skewers:
- 1 pint cherry or grape tomatoes
- 1 large English cucumber or regular cucumber
- 1 cup pitted Kalamata olives
- 8 ounces block feta cheese
- 1/2 cup Greek-style or Italian dressing, plus more if needed
- Small appetizer skewers or cocktail picks
- Optional: fresh parsley or dill for serving

Ingredients for Greek Salad Skewers
- 1 pint cherry or grape tomatoes – Use ripe, firm tomatoes for the best flavor and presentation.
- 1 large cucumber – English cucumber or regular cucumber both work well.
- 1 jar (9.5 oz) pitted Kalamata olives – Drain before using.
- 8 oz chunk feta cheese – Cut the feta into approximately 36 bite-size cubes.
- Greek or Italian dressing – Use enough to lightly coat and marinate the vegetables and feta.
- Small appetizer skewers – Choose sturdy skewers that are easy for guests to handle.
Optional Ingredients
- Red onion – Thinly sliced for extra crunch and flavor.
- Fresh parsley or dill – Chopped and sprinkled over the finished skewers.
How to Make Greek Salad Skewers
1. Prepare the Vegetables
Wash and dry the tomatoes and cucumber thoroughly. Cut the cucumber into bite-size pieces that are large enough to stay securely on a small skewer.
If your cherry tomatoes are relatively large, cut them in half. Very small tomatoes can remain whole. Drain the Kalamata olives well before using them.
Keeping the pieces relatively similar in size makes the finished skewers easier to assemble and eat.

Cut the Feta Into Cubes
Pat the feta gently with a paper towel if it is very wet, then cut the block into approximately 1-inch cubes.
The cubes don’t have to be perfectly identical, but they should be sturdy enough to slide onto the skewer without crumbling. Cutting the feta separately also makes assembly easier.
Set the feta cubes on a clean plate or in a shallow container while you prepare the dressing.

Marinate the Vegetables
Place the cucumber pieces, tomatoes, and drained olives in a medium bowl. Add the Greek-style or Italian dressing and gently toss until the vegetables are lightly coated.
Don’t overmix. Tomatoes can become soft if they are tossed aggressively, and the goal is to keep the vegetables fresh and intact.
For a stronger flavor, cover the bowl and refrigerate it for a few hours. If you’re preparing for a party, this step can be done the day before.

Marinate the Feta Separately
Place the feta cubes in a small bowl and spoon enough dressing over them to lightly coat the cheese.
Gently turn the cubes rather than vigorously stirring them. Feta is naturally crumbly, so rough handling can cause the cubes to break apart.
Cover and refrigerate the feta along with the vegetables if you’re making the skewers ahead. Keeping the cheese separate until assembly helps preserve its shape.

Assemble the Skewers
When you’re ready to assemble, thread the ingredients onto small appetizer skewers.
A simple order is olive, tomato, cucumber, and feta, although you can change the arrangement. Leave enough of the skewer exposed at the bottom for guests to hold comfortably.
Place the feta at the end of each skewer. Its sturdy square shape can help the finished skewers sit upright when arranged on a platter.

Arrange and Serve
Transfer the finished skewers to a serving platter. Arrange them in a single layer or stand them upright together for a more dramatic presentation.
If desired, sprinkle a small amount of chopped parsley or dill over the platter. Serve chilled or cool.
For the best texture, keep the finished skewers refrigerated until shortly before serving rather than leaving this fresh appetizer sitting out for an extended period.

No reheating is necessary. Serve the skewers chilled or allow them to sit briefly before serving so they’re cool but not excessively cold.
